American snack board full of classics | RTL News

Especially now that we are not yet having a Friday afternoon drink with colleagues or friends, it means hanging up the garlands at home. Hugo is doing it this week with a classic American snack board. Let the chips, cheese cubes and Amsterdam pickles make way for mini burgers, buffalo wings and delicious dips.

Maryland crab cakes

  • Cocktail plate dish for 4 persons
  • Preparation approx. 20 minutes

Ingredients

  • 2 to 3 white sandwiches
  • ½ bunch of flat-leaf parsley
  • 1 egg
  • 2 tablespoons of mayonnaise
  • 1 teaspoon mustard powder (mustard is also possible)
  • 2 teaspoons Worcestershire sauce
  • few drops of Tabasco
  • 500 g clean crab meat (fish shop)
  • salt
  • pepper
  • neutral oil
  • to serve: lemon wedges and ravigotte sauce

Ingredients

  • 1 to 2 shallots
  • ½ bunch of flat-leaf parsley
  • ½ bunch of tarragon
  • 1½ tablespoons of capers
  • 4 tablespoons of mayonnaise
  • 4 tablespoons of whole yogurt
  • ½ lemon
  • salt
  • pepper

Buffalo chicken wings

  • Cocktail plate dish for 4 persons
  • Preparation approx. 20 minutes

Ingredients

  • 12 chicken wings
  • salt
  • oil for frying
  • 4 celery stalks
  • blue cheese dip * (scroll further for the recipe)
  • 30 g butter
  • 5 tablespoons of spicy barbecue sauce

Ingredients

  • 100 g Danish blue
  • 100 ml of sour cream
  • 100 ml of mayonnaise
  • 1 tablespoon of white wine vinegar

Mini hamburgers

  • Cocktail plate dish 6 pieces
  • Preparation approx. 20 minutes

Ingredients

  • 1 shallot
  • 300 g ground beef
  • salt
  • pepper
  • neutral oil
  • 6 mini hamburger buns
  • mustard
  • Ketchup
  • sweet and sour pickles
  • lettuce leaves
  • slices of tomato

Maryland crab cakes

Whether you are having a drink or want to have something to snack on for binge-watching, you have a good one with this snack board. Hugo starts with the crab cakes. To do this, put the white sandwiches including crusts in the food processor until you have breadcrumbs.

Then mix the wet ingredients in a bowl: the egg with the mayonnaise, mustard powder, Worcestershire sauce and Tabasco. Top it off with some salt and pepper to taste. Mix it with a whisk so that the flavors blend well.

Well stirred? Finely chop the parsley (including the stems) and add it along with the crab meat and breadcrumbs. Mix everything together well. Make at least eight small crab cakes from the mixture. Hugo does brown baking just before the drinks start.

Making mini burgers

Homemade burgers, who’s not to love? What you do: slice the tomatoes and prepare them for when you are going to cover the hamburger buns.

Hugo keeps the meat basic. Peel and finely chop the shallot. Season with a pinch of salt and pepper. Knead the meat and make six burgers. Pay attention: Do not knead too long otherwise the meat will become tough. Place the burgers on a plate in the refrigerator and let them stiffen briefly. Just before you serve the snack board, you fry the burgers in a few minutes.

Buffalo chicken wings

Heat a layer of oil in a wok or frying pan. You will fry the chicken wings in this way. Meanwhile, break the chicken wings on the joint in half. If you have bought individual chicken wings, you can skip this step. Pat them dry on kitchen paper. Then you sprinkle them with some salt and pepper. Time to fry them until crispy, crunchy buffalo wings!

Tip: to know if the oil is hot enough, you can hold a skewer in the oil. When it starts to bubble gently, as soon as you put the stick in the oil, it is hot enough to fry. If it starts to bubble hard, the oil is too hot.

While the chicken wings are in the oil, heat the butter with the spicy barbecue sauce in a frying pan or skillet. Let it reduce briefly. Are the chicken wings golden brown in color? Let them drain on kitchen paper. Then you put them through the sauce and put them in a bowl.

Blue cheese dip

Making your own cheese dip is very simple. Add the sour cream, mayonnaise, 100 grams of blue cheese (Danish blue) and a small splash of white wine vinegar for freshness. Puree all ingredients with a hand blender or chopper until smooth. Once you have done this, cut the celery into sticks.

Homemade ravigotte sauce

You can buy ravigotte sauce ready-to-eat. Making your own variant is even better. And very simple! Peel and finely chop the shallot, coarsely chop the capers and finely chop the herbs. Mix the three ingredients with the mayonnaise and yogurt. Season it with lemon juice, salt and pepper.

Bake it

Time to bake the crab cakes and mini burgers. For the crab cakes, heat a layer of oil in a frying pan. Fry them until golden brown on both sides. Serve them with the ravigotte sauce and lemon wedges.

Also heat a splash of oil in a frying pan for the burgers. Fry them medium cooked or to the liking of your fellow drinkers. Cut the hamburger buns and fill them with a leaf of lettuce, tomato slice, mustard, ketchup and sweet and sour pickle.
