Barbecue plantain with chorizo and lime

Are you tired of the hamburgers, vegetable skewers and chicken satay from the barbecue? Then we have an original barbecue dish for you: plantain with chorizo and a dressing of lime, honey and cumin. Warm, comforting and incredibly rich in flavors, this is really what you want on your barbecue this summer.
Ingredients
For 2 people
- 2 plantains in the skin, the ends cut off
- Olive oil
- 75 grams of dried chorizo sausage, crumbled into small pieces
- Salt pepper
For the dressing
- 1 tablespoon of roasted cumin seeds
- 1 tablespoon of honey
- Grate & juice of 1 lime
- The green of 1 stalk of spring onion, finely chopped
- Splash of olive oil
For garnish
- Handful of coarsely chopped coriander leaves
The only difficult thing about this dish is to wait patiently until the plantains are cooked. That takes about 40 minutes. That is more than enough time to make the lime dressing. And to open a fresh beer of course …

This is how you make the plantain from the barbecue
Preheat the barbecue (or let someone do this for you).
Halve the plantains and give them a lick of olive oil with a kitchen brush and season with salt and pepper.
Using a knife, make a notch through the length (but do not cut through the skin) of the flesh and gently push in the pieces of crumbled chorizo.
Gently arrange the plantains on the preheated barbecue grate and grill for 40 minutes.
Meanwhile, make the dressing by mixing all ingredients in a bowl.
Remove the plantains from the grid, serve on a plate or dish and spoon the dressing over it. Finish with the fresh cilantro.
