Blood orange cake with pink icing


For 10 people

For the cake:

  • 113 grams of soft, unsalted butter
  • 250 grams of sugar
  • 2 eggs
  • 2 tablespoons of blood orange grater
  • 180 grams of flour
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of baking powder
  • Pinch of salt
  • 80 ml buttermilk
  • 2 tablespoons of blood orange juice
  • 1 teaspoon of vanilla extract

For the syrup:

  • 2 tablespoons of sugar
  • 1 tablespoon of blood orange juice
  • 120 ml of water

For the icing:

  • 115 grams of icing sugar
  • 2.5 tablespoon of blood orange juice

You have to watch a bit how you come out with the oranges. For some you only use the juice, for others the grater and juice. And some oranges you cut into slices. But those who are smart buy in generously.

This is how you make this blood orange cake

Preheat the oven to 190 degrees.

Using a mixer, mix the softened butter with the sugar until creamy. Then add the eggs and the grated blood oranges one by one and mix well.

In a bowl, mix the flour with the salt, baking powder and baking soda.
In another bowl, mix 2 tablespoons of juice from the blood oranges with the buttermilk and vanilla extract.

Half the contents of both bowls with the butter and sugar and mix. Add the other half and mix until you have a nice batter.

Grease a cake tin with butter and line with baking paper. Divide the batter evenly over the tin and smooth the top.

Peel 2 to 3 blood oranges and cut them into thin slices. Place it on top of the cake and put it in the preheated oven. The cake will bake golden brown in 60 to 70 minutes. Test with a skewer whether it is nicely done in the middle. Let the cake cool outside of the oven.

Syrup & glaze

Meanwhile you make the syrup. To do this, mix the granulated sugar, water and a tablespoon of blood orange juice in a saucepan and bring to the boil. Lower the heat and simmer for 5 minutes.

For the icing, very gently mix the icing sugar with a little of the blood orange juice. Start with a little bit and keep adding more until you have the desired color and thickness.

Pierce the cooled cake with a fork and pour the syrup over it. After that, drizzle the pink icing over the blood orange cake for the finishing touch.
