Cookbook tested: guilt-free crispy turkey burger (+ recipe) | Culinary

Getting hungry instantly when flipping through a cookbook is always a good sign. The photos in this book by food blogger Laurence Bemelmans – also known as As cooked by Ginger – look delicious. I certainly can’t look at the desserts without my mind wandering: I want to make and eat this as quickly as possible.

But before I dive into the chocolate, strawberry and or cream, the turkey crispy burger comes on the table. I am already a fan of the ingredient list, because it is very simple. Even plain breadcrumbs, where many recipes nowadays specifically call for panko. Downside to the list: the supplies are not grouped. For example, you need 1 egg, and later another 2 eggs – not very clear.

There is also no weight indication with the turkey steaks. Before I realize, there are pieces of cloth in the pan that barely fit between a hamburger bun, oops. Cooking is very simple, without surprises.

And taste it? Tasty, but you don’t get a really satisfied feeling. Maybe the ingredients were a bit too simple. An extra pinch of cayenne pepper to spice up the guacamole would have been better. Or even an extra sauce on the side? Or maybe a piece of grilled pineapple? A juicy slice of tomato? It could have given this citizen just that little bit more. But nothing that a top dessert cannot easily make you forget.

Recipe: Crispy turkey burger with fried egg and guacamole

Ingredients (for 2 persons)

-1 tsp chicken seasoning

-60g breadcrumbs

-2 turkey steaks 2 tbsp flour

-1 egg

-1 avocado

-Juice of 1/2 lime

-2 burger buns

-2 eggs

-4 leaves of lettuce

-Pepper and salt

-Olive oil



Preheat the oven to 180 ° C.

Add the chicken seasoning to the breadcrumbs and mix. Rub the turkey steaks with the flour, then pass them through the egg and then through the breadcrumbs. Heat a large knob of butter in a frying pan and fry the turkey steaks in it. Crust on a high heat until they get a nice golden brown crust, then let it cook further on a low heat.

Meanwhile, make the guacamole. Mash the avocado with a fork and add lime juice, pepper, salt and a drizzle of olive oil.

Cut the burger buns in half and place in the oven, inside side up, for about 7 minutes. Heat a knob of butter in another pan and fry 2 fried eggs, which you season with salt and pepper. Take the bottom two halves of the burger buns and place 2 leaves of lettuce on each bun. Top with the turkey burger and divide the guacamole over it. Finish with the fried egg and the top half of the bun. Prick the egg yolk and sink your teeth into this delicious treat

Experiment tip:

Serve with potato wedges. Cut a few potatoes into wedges and drizzle with olive oil. Season with your favorite herbs and put in a preheated oven at 180 ° C for 30 minutes. Of course this is also delicious with regular fries.
