This is how you prepare the fennel
Slice the fennel and halve the lemon. Grab your grill pan and put it on high heat. Your pan cannot be hot enough! Grilling the fennel gives you a more intense flavor. Don’t have a grill pan? Then it is also allowed in a frying pan.
TIP: Especially put the oil on the ingredient that you are going to grill and not in the grill pan itself.
Grill the fennel in the grill pan with the lemon. You hardly have to touch them, just leave them for a while and turn them over until you see that they are really browning on the side.
Now they are grilled, but you also want to cook them. Grab a piece of aluminum foil, cover the grill pan and reduce the heat a little. This way you let the fennel steam.
Ready? Place the fennel on a plate. Season with the juice from the roasted lemons and add salt and pepper. Drip some olive oil over it if necessary. Cut the parsley and sprinkle it over the dish.
Making the pasta
Then we will make the pasta. Start by cutting the raw sausage into strips. Sear the sausage in a frying pan with a drizzle of olive oil. Finely chop the rosemary and add. Then cut the pancetta into pieces and add it to the sausage. Peel and slice the garlic and add this too. Let it bake for a while.
Meanwhile, mix the egg with the cream in a bowl. Grate the lemon zest on top and add 1 tablespoon of lemon juice. Grate the cheese and mix in. Season with salt and pepper.
Cook the tagliatelle according to the instructions. Drain and collect a cup of the cooking liquid, or leave a layer of cooking liquid in it. In the pan, mix the tagliatelle with the sausage and the cream mixture. If necessary, add some cooking water to make the pasta a bit smoother.
Serve the pasta and grate some more Parmesan cheese over the dish. Tasty!
