All the good things about shakshuka, but on a nice piece of toast: doesn’t that sound like a dream of a lunch / breakfast? Dreams do come true, here is an incredibly easy and delicious recipe for shakshuka toast with hummus.
For 2 persons:
- 2 thick slices of good bread (preferably sourdough)
- 4 tablespoons of hummus
- 2 eggs
- 1 large, ripe beef tomato
- 1/2 teaspoon ras el hanout
- Handful of fresh coriander, finely chopped
- Black sesame seeds
- Pinch of dried chili
- Salt pepper
- Optional: feta, crumbled
In the Netherlands we secretly often eat shakshuka for dinner, while it is actually a breakfast recipe. With this shakshuka toast we go back a bit to the roots of this delicious egg dish. Toast, hummus, fried tomato and a fried egg: it hardly gets any better!
Shakshuka toast with hummus
Preheat the oven to 180 degrees.
Cut the beef tomato into 4 thick slices. Sprinkle them on both sides with some salt, pepper and ras el hanout. Place them on a parchment-lined baking tray and bake them soft and juicy in the oven for about 10 minutes.
Toast the bread until golden brown.
Spread the toast with the hummus. Place 2 slices of tomato on each slice of toast.
In a small frying pan, fry the eggs with a little oil or butter until the egg whites are nicely set. Spoon the eggs on top of the shakshuka toast.
Sprinkle with the black sesame seeds and salt and pepper. Add another pinch of dried chili for color and flavor. Sprinkle with the chopped coriander (and some crumbled feta if you like).
