A healthy soup is the best remedy for days when life seems like a struggle. It warms you up, you get an instant vitamin boost and your taste buds have every reason to be satisfied. This healthy cauliflower soup with an Asian twist is the perfect example.
For 2 to 3 people
- 1 cauliflower, without leaves and in florets
- 1 teaspoon of curry powder
- 1 teaspoon of turmeric
- Sprinkle sesame oil
- 1 inch ginger, peeled and chopped
- 1 large white onion, peeled and chopped
- 1 clove of garlic, crushed
- 2 liters of vegetable stock
- 4 dl coconut milk
- 1 stalk of lemongrass, knotted
- 2 tablespoons of soy sauce
- Grate of 1 lime
For the finish:
- Sesame seeds
- Slices of lime
Healthy cauliflower soup with an Asian twist
Preheat the oven to 200 degrees. Divide the cauliflower florets over a baking tray and add a dash of sesame oil, the curry powder and the turmeric. Mix together and roast for 15 minutes in the preheated oven.
Towards the end of the 15 minutes, heat a drizzle of sesame oil in a large saucepan over the heat and sauté the onion, garlic, and ginger until very light brown. Now spoon 3/4 of the roasted cauliflower into the pan and stir to combine. Add the vegetable stock and the lemongrass stalk and reduce.
After 15 minutes, remove the lemongrass and mix the soup until smooth. Then stir in the soy sauce, lime zest and coconut milk and taste. Add some extra soy sauce if necessary.
Pour the cauliflower soup into bowls and divide the remaining grilled cauliflower over it. Finish with sesame seeds, a squeeze of Sriracha and fresh cilantro. Serve with a wedge of lime.
