Do you always need healthy recipes that are tasty and simple? These healthy salmon fish packages are a typical example of such a recipe. Centuries old, but no less nice to have in your repertoire.
For 2 persons:
- 2 pieces of salmon
- 1 small zucchini, cut into half moons
- Two good hands of (colored) cherry tomatoes
- 200 grams of baby potatoes, in the skin
- 1 red onion, cut in half rings
- 1 clove of garlic, thinly sliced
- 1/2 lemon, sliced
- Few sprigs of fresh oregano
- Olive oil
- Salt pepper
- Two sheets of baking paper
With the recipe below we go on the Mediterranean tour with lots of cherry tomatoes, zucchini and jacket potatoes. You could also use a nice piece of whitefish instead of salmon.
Tip: these fish packages are even easier to fold from aluminum foil, but baking paper is just that little bit better for the environment, and it also looks nice and rustic.
Healthy fish packages with salmon
Preheat the oven to 200 degrees.
Prick the potatoes all around, place them on a plate and steam them for 2 minutes in the microwave. Then cut them in half (depending on their size).
Fold a sheet of baking paper in half. Place the slices of zucchini, onion and garlic on one half. Place the salmon on top and divide the tomatoes and potatoes around it.
Place two slices of lemon on top of the fish and drizzle with a nice splash of olive oil. Season well with salt and pepper and place a sprig of oregano on the fish.
Fold the paper tightly until you have a closed package. If necessary, tie extra tight with a piece of kitchen twine. Place the fish parcels in an oven dish and bake them in the oven for 20 to 25 minutes.
Tear open the fish parcels and serve them warm.
