This is how you make these cakes with cinnamon sugar

First of all, make sure that all ingredients are at room temperature. Preheat the oven to 175 degrees.

Then make the beurre noisette. Use this foolproof method for making beurre noisette.
Pour the beurre noisette into a bowl and allow to cool completely, to room temperature.

Prepare a muffin tray and grease it with some butter.

In a large bowl, mix the flour with the baking powder, salt, gingerbread spices and orange zest. Set aside.

When the beurre noisette has cooled, mix it with 65 grams of sugar and an egg. Beat the mixture until fluffy with a mixer, for five minutes.

Then add the dry ingredients and the milk to the mixture alternately, until you have an even batter.

Divide the batter over the muffin tray and put it in the oven for 20 to 25 minutes. Once they are golden brown and cooked through, remove the plate from the oven. With the help of a knife you can flip the cakes out of the mold.

Now we are going to give the cakes a coating of cinnamon sugar. To do this, mix the cinnamon and sugar in a bowl. Put the melted butter in another bowl.

First pass the airy cakes all the way through the butter and then roll them in the cinnamon sugar. Serve them while they are still warm.
