Oatmeal with almond milk, grapefruit, nut butter, cinnamon and maple syrup: a tasty and nutritious breakfast can be that easy. If that isn’t concentrate, then we don’t know anymore.
For 2 persons:
- 500 ml almond milk
- 200 grams of oatmeal
- 1 teaspoon of cinnamon (+ extra)
- 1/2 grapefruit, peeled and chopped
- 2 tablespoons nut butter (of your choice)
- 2 tablespoons of pumpkin seeds
- Maple syrup
While the combination of grapefruit, almond, and maple syrup is great, this recipe also offers great variety. Replace the grapefruit with mandarin and opt for coconut milk instead of almond milk.
Also in terms of nut butter you can simply choose which one you like best. Cashew butter, almond butter, peanut butter, pistachio paste, you can go wild!
This is how you make this oatmeal
Heat the almond milk with the oatmeal in a saucepan and bring to the boil. Stir well in between so that the bottom layer does not stick.
Cook for a few minutes until the milk has been absorbed by the oatmeal and a firm mass is formed. Let it cool slightly.
Divide the mass between two bowls. Finish with a spoonful of nut butter, a few pieces of grapefruit, pumpkin seeds, a splash of maple syrup and a pinch of cinnamon.
