Recipe of the day: Balinese beef tongue | Culinary


• 1 beef tongue of 600 gr

• 2 ½ liters of water

• 3 cups of beef stock

• 4 tbsp soy sauce manis

• 2 tbsp thin soy sauce (kikkoman-like)

• ¾ teaspoon of ground white pepper

• ¼ tsp freshly ground nutmeg

• zest of a lime

• 3 tbsp dried onions

• 3 potatoes peeled and cubed 2 ½ centimeters


Bring the water to a boil and add the beef tongue. Bring to a boil again and simmer for an hour. Allow to cool to room temperature and remove the skin from the tongue with a sharp knife. Cut the tongue into equal strips and place in a frying pan. Add the beef stock, the ketjap manis and the thin soy sauce, pepper, nutmeg, lime zest and a little juice and the fried shallots. Bring to a boil and simmer for 10 minutes. Then you add the potatoes and let the dish simmer until done. Some extra fried shallots and só delicious food.
