Necessary for 4 people:
• 250 g red lentils
• 1 large cauliflower or two small ones
• 3 slices of stale bread
• 1 onion
•2 cloves of garlic
• 1 teaspoon nutmeg
• 1 tbsp turmeric powder
• 125 gr flour
•salt and pepper
• oil for frying
Use those little red lentils. Soak them overnight and drain. Allow to drain well in a sieve. Divide the cauliflower into florets. Boil them in salt water for three minutes. Drain and rinse with cold water.
Now turn on the food processor. Add the bread, grind through, onions, garlic, lentils, turn and turn. Nutmeg, turmeric on the side. And now the flower. Until everything is beautifully fine. Now stir the water under. Season this batter with some salt and pepper.
Firm the oil hot in deep frying pan. Put the cauliflower florets in some flour, then through the lentil batter and fry them until crispy brown in the hot oil. Three, four at a time, and three minutes at a time. Drain and serve.
Superb next to mushrooms in sherry sauce or Spanish small meatballs.
