We are going to make a creamy crab soup. You can decide for yourself whether to take crab or fake it.
Necessary for 2 people:
• 200 gr canned crabmeat
• 1 kohlrabi in cubes
• 20 gr butter
• 20 gr flour
• 2 shallots, chopped
• 1 thin leek, in rings, only the light green
• 1 l fish stock
• 2 dl cream
• 4 tbsp rice
• 1 tbsp finely chopped parsley
First put the shallots in butter, add the leek rings. Let it get some color. Sprinkle flour on it. Stir, fry a little and then pour in the fish stock, shot by shot. Keep stirring. Then bring to a boil. The stock is now nicely bound. Add the kohlrabi cubes. Add the rice. Now simmer gently for 20 minutes. Kohlrabi is done, then the rice is done. Remove the crab from the can, drain and it can be added to the soup at the end. Boil once more. Ready.
You serve the soup with some lemon zest on top, a dash of cream in it, and a little finely chopped parsley. Maybe a drop of sherry? That is allowed. Drop of whiskey? That is also allowed. Next week the weather will be nice again, now hang out over a steaming cup of soup.
