Necessary for four people:
• 1 kg of beef, in strips
• 800 g onions, in rings
•2 cloves of garlic
• 1 teaspoon of marjoram
• 1 teaspoon of cumin
• 4 tbsp butter
• 2 tbsp red wine vinegar
• 4 tbsp paprika powder
• 4 tbsp parsley, finely chopped
• salt and black pepper
Just mix solid water with vinegar. You have to get used to that, really. Fry the onions in clarified butter until almost brown. Add garlic, marjoram and cumin. Add paprika powder and then deglaze with a dash of vinegar water.
Meat is allowed in. Add salt and pepper and put a thick lid on. Let it simmer for 2 to 3 hours, checking every half hour to see if it does not get too dry. Then add another dash of vinegar water. If the smell drives you crazy and you pull it, add another dash of plain water.
Now simmer for 10 minutes. Add steaming potatoes. From the freezer, perhaps fava beans, to also have a little green with it? And in any case, a lot of finely chopped parsley.
