A la Newburg, a preparation with white sauce and sherry is also called and that is in reference to the famous Delmonico’s restaurant in New York. One Wenberg is said to have introduced an amazing lobster recipe with that sauce there. It is strange that some time later he reversed the initials of his last name and made an e and u and it became Newburg.
Start with the mushrooms. Put them on with the chopped onion and fry them in the butter. And may take a while. Then add the sherry and let it simmer for a while. In another pan, melt 2 tablespoons of butter and stir in 2 tablespoons of flour. Do not let it color, let it cook. Pour in the heated cream, set high and stir with a whisk until the sauce binds. Beat the egg yolks with 2 tablespoons of water and stir into the white sauce. Don’t cook anymore, of course, otherwise you will get an omelette. Heat very gently. Start building the flavor now. Pour in the sherry cooking liquid, a drop of extra sherry can come in handy. Salt, a little nutmeg, a little cayenne pepper. And then… roast a great sourdough sandwich. Cover it with mushrooms and pour plenty of sauce over it.
