Is anyone still following that? Does not matter. I adjust it slightly. It says that you have to fry the onions in a stockpot for about 10 minutes. Just make it 20 minutes. The slower and the longer, the more delicious those onions will be. Only after 20 minutes do you turn the heat up a bit and let the onions color slightly. Now add the turmeric, allspice and oatmeal, fry a little more until all the flavors are released. The thyme can be added and then the vegetable stock. Bring to the boil, 15 minutes, the oatmeal will lightly bind the soup. Some salt, some pepper.
And now for the regular ritual, spoon the soup into oven-proof bowls. Sprinkle the crumbled goat cheese on top and place under a hot grill until the cheese turns light. Onion soup, always delicious.
