Needed for 4 or a few more:
• 1 ½ kilos of potatoes, waxy cookers
• 4 firm onions
• 2 x 40 gr butter
• 1 ½ dl milk, hot
• 225 gr blue cheese
• 30 g grated matured farmer’s cheese
Take wax cookers for this dish. Actually, I always take solid cookers because I don’t like floury potatoes myself, but for mashed potatoes always use solid cookers, the floury slurps absorb too much cooking water and taste a bit flat when you make mashed potatoes.
Peel the potatoes and boil them in plenty of water with a little salt. They can be cooked properly. Drain, let it steam for a while and mash them into crumb. Make the milk hot and pour it in, now stir well with a whisk, add 40 grams of butter. Season with some pepper. Cut each onion into 8 pieces, braise in 40 g of butter for at least half an hour until sweet and sticky.
Grease an oven dish. Add half of the puree, onions on top, some more pepper, now the blue cheese on top and finish with the rest of the puree. The grated cheese on top, a few lumps of butter here and there and the whole in the oven at 140 ° C. Half an hour. And that would be Off, hahahaha! Enjoy it and don’t let anything fool you.
