Go to the butcher. And buy a steak. But add that you want to make steak tartare. Each butcher then looks differently, pricks up the ears, gets a light in his eyes and dives into the cold store for something “special”. Place the meat directly in the refrigerator.
Required for 2 people:
• 150 gr best steak
• 1 onion, chopped
• 2 pickles, fanned
• yolks of 2 small eggs
• 4 tsp capers
• salt, pepper, mustard, ketchup, Worcestershire sauce and tabasco.
Take out your sharpest knife and run it along the sharpening steel. Now you cut the meat fine, and then again. Like minced meat, but just not.
Put the meat in a bowl and season with some olive oil, salt, pepper, a lick of mustard, a little bit of ketchup and some Worcestershire sauce. Make a ball of this for everyone at the table. Work quickly, keep the meat cold.
