Recipe: This is how you make the classic apple crumble

Apple crumble

  • 50g white almonds
  • 100g cold butter
  • 150g flour
  • 100g sugar + 1-2 tablespoons for the filling
  • salt
  • 4-5 apples
  • 1 lemon
  • 125ml crème fraîche

To work!

Preheat the oven to 180 degrees and then cut all apples into large cubes. Does not have to be very tight, can be quite fast. Place in a bowl and scrape some lemon zest over it. Also add a tablespoon of sugar. Just mix and that is the basis.

You make the dough from half flour and half (homemade) almond flour. For this, put almonds in a blender, mix and you get coarse almond flour.

Empty the container of almond flour into a clean bowl and add the regular flour and a small pinch of salt. Mix it together with a fork and add the sugar.

The ultimate ratio for a crumble is often:

  • 200 grams of flour
  • 100 grams of butter
  • 100 grams of sugar

If you want to replace a part with almond flour, it is:

  • 100 grams of almonds
  • 100 grams of flour
  • 100 grams of butter
  • 100 grams of sugar

Take the butter (it must be really cold and really just come out of the fridge) and cut it into slices and then into small cubes.

Swirl the cubes in the flour and then rub the mixture with your hands. Kind of like “washing your hands”. A crumble really has pieces / grains and is not a coherent whole.

Then put the apples in a tin and spread the crumble over it. Then it can be put in the oven for 20-30 minutes. Ready? Serve the apple crumble with a vanilla sauce or a scoop of vanilla ice cream.
