You could think of this as a #fitgirl recipe. But above all, it is extremely delicious! A savory omelette with spinach and feta. Add a little parsley for extra flavor. This recipe is ideal as a lunch dish or as a meal that you can enjoy just before or after exercise.

Savory omelette with spinach and feta

Put 100 grams of spinach in a bowl and pour boiling water over it. Let stand for a minute and then drain into a colander or strainer. Squeeze all the water out of the spinach (note: a lot of water will come out). The drier the better.

Then place the ball of dry spinach on a cutting board and chop finely. Chop the parsley immediately.

Beat the eggs (or just the egg whites, if you like) with the parsley and spinach. Season with salt and pepper (moderate with the salt, because the feta is already salty in taste).

Heat some oil in a nonstick frying pan over medium heat. Bake the omelet for about 3 minutes until the bottom is golden brown. Crumble the feta over the center of the omelette, then triple fold the omelet. Fry for another minute and serve the savory omelet immediately.
