Spinach with pine nuts and raisins

This tasty side dish of spinach with pine nuts and raisins is a classic by Nigella Lawson, with a little Middle Eastern Ottolenghi twist by first braising the onions briefly with some cumin.

Ingredients

For 6 to 8 people:

  • 50 grams sultanas
  • 1 onion
  • 1/4 teaspoon of cumin
  • 2 tablespoons of olive oil
  • 50 grams of pine nuts
  • 1 kilo of spinach
  • 2 tablespoons of white wine

Most everyone loves spinach. With this recipe you prepare it just a bit differently than usual. The raisins give a sweetness, the pine nuts provide a crunch and the onions are a delicious seasoning.

Serve this spinach with pine nuts and raisins as a side dish with couscous, a piece of meat or a table full of mezzes.

Spinach with pine nuts and raisins

Roast the pine nuts in a dry frying pan until golden brown.

Cut the onion into thin rings. In the frying pan over low heat, let them simmer very slowly in olive oil, until they have turned completely soft and golden. You really need to give this some time: about ten minutes. It will be worth it. Then add the cumin and fry briefly.

Wash the spinach and add it to the onions in the pan in stages. Shovel well so that it can shrink.

Sprinkle the pine nuts and raisins over the spinach, stir a little more and you’re done.
