Tacos with salmon and avocado mango salsa

We were so excited for avocado mango salsa and thought: what will we combine it with? It became salmon. Then the tacos came along. And then the lime mayonnaise. It became a dish to die for.


For 8 small tacos:

For the tacos:

  • 1 ripe mango, in small cubes
  • 1 ripe avocado, in small cubes
  • 1/2 red bell pepper, in small cubes
  • Half a large red onion, finely chopped
  • 2 limes (grater and juice)
  • 2 salmon fillets
  • 8 small tortillas (gorditas)
  • 1 head of baby Romaine lettuce
  • Small bunch of cilantro, chopped finely
  • 1 small clove of garlic, crushed
  • Salt and pepper
  • Olive oil

For the lime mayonnaise:

  • 180 ml of neutral oil
  • 1 egg
  • 1 teaspoon of mustard
  • 1 tablespoon of vinegar


Make sure the beers are cold: you want to eat this dish with your friends, while enjoying an ice-cold drink!

The avocado mango salsa gives it a fresh taste. Tip: make sure you cut the ingredients into nice equal cubes. Or what is called brunoise. We make the lime mayonnaise ourselves, with the hand blender. So simple and ridiculously fast that you wonder why you still buy ready-made pots.

Ready? Let’s cook.

This is how you make these tacos with avocado mango salsa

First put the salmon in the marinade. To do this, mix the juice of half a lime with a tablespoon of olive oil, the crushed garlic and salt and pepper. Place the salmon in it and refrigerate for 15 to 30 minutes.

Then make the salsa. Mix the bell pepper, mango and avocado in a bowl with the red onion, the juice of half a lime, a tablespoon of olive oil and salt and pepper.

Time for the lime mayonnaise. Take a bowl with high edges (a measuring cup works perfectly) and put the oil, the egg, the mustard, vinegar and the juice and the grater of half a lime in it. Mix briefly with the hand blender and you will see that you have mayonnaise in seconds.

Heat the tacos one by one in a frying pan (or in the microwave) and in the meantime fry the salmon in a frying pan with a layer of olive oil. Remove the salmon from the pan, let it rest on a cutting board and then pull it into large pieces with two forks.

Now you can prepare the tacos. In the middle of each taco, put some of the avocado mango salsa, a few leaves of lettuce (you can easily tear it off the head), some salmon and then another scoop of salsa. Finish with some coriander leaves and a spoonful of the lime mayo.

Serve the tacos with some lime wedges and a bottle of hot sauce, to taste.
