Tomato soup is a classic dish. There are thousands of variations on this dish, but the perfect tomato soup is actually very easy: keep it simple. There is really no need to add lots of spices, there is already enough flavor to the tomatoes. So you don’t need anything special. You get that great taste by choosing the best ingredients.
- 750 g Roma tomatoes
- 1 small can of tomato paste
- 1 onion
- 2 cloves of garlic
- 1 vegetable stock tablet
- olive oil
- 750 ml of water
That’s how you make it
As we said, step one is to choose the best ingredients. Expensive is not necessarily better, but fresh is.
Chop an onion and finely chop the garlic. Cut the tomatoes in half and remove the seeds with your hands. It takes a while, but it really tastes better. Cut the rest into chunks.
Place a stockpot on medium heat and add a generous layer of olive oil. Fry the onion and garlic for about three minutes. Keep stirring. Then add the tomato pieces and fry for five minutes.
Only then add the water and vegetable stock. Stir in the tomato paste and let it cook for a few minutes.
Take the hand blender and puree everything. Then let it boil for a while. Season the soup with a little salt or pepper.
Tip: if you want, you can add a little bit of cooking cream or a good pat of butter. This will make the soup a bit fuller.
