Chicory stew with pear
Summers and winters at the same time. Anyone who likes a sweet tooth will be happy with this recipe! The basis is a light stew with crème fraîche instead of butter or milk to make the puree. Mix in finely chopped chicory. Fry some bacon and put two quarters of a tasty ripe pear on the plate with the chicory stew. Sprinkle with walnuts or bacon and a touch of grated mature sheep’s cheese. A little summer in the winter!
Red cabbage stew with sausage
You can also add something completely different to your stew, such as red cabbage and cranberry compote. An idea from our loyal reader Jetty Meun from Arnhem. First, drain the red cabbage well and put it in a pan with the cranberry compote and heat up slowly. Mash this through your boiled potatoes, add some butter or milk if necessary and serve with a tasty beef bratwurst.
Putty or brown bean stew
The name may not sound very tasty, but that is the stew! You cook 1 kg of potatoes and heat a pound of brown beans. Drain the beans and potatoes and reserve some of the liquid. Mash boiled potatoes and beans and add some fried bacon and pearl onions. Smooth with liquid and milk. Season with pepper.
