For 4 persons:
- 8 carrot tortillas from No Fairytales
- 4 eggs
- 1 avocado
- 3 tomatoes
- ½ head lettuce
- 200 grams of grated carrot
- sunflower oil
- Salt and pepper
This egg and avocado tortilla is perhaps the easiest (and tastiest!) Way to get more vegetables. This is partly because for this recipe you use the tortillas from No Fairytales, which consist of 45% vegetables. Enjoy your meal!
Tortilla with eggs and avocado
Remove the skin and kernel from the avocado and cut the flesh into cubes. Wash the lettuce and remove the leaves. Cut the tomatoes into cubes of about 5 mm.
Break the eggs into a bowl and beat with a fork and season with salt and pepper. Heat sunflower oil in a frying pan and pour the eggs into the pan. Use a spatula to keep the eggs moving in the pan while they cook evenly. Turn off the temperature when most of the eggs have set and let them rest.
Place a carrot tortilla on the counter or on a plate and spread a quarter of the leaves over it. Then divide a quarter of the avocado cubes, the tomato cubes and the grated carrot in the center of the tortilla. Place the egg on top.
Fold the top and bottom of the wrap inwards and roll up the entire wrap with the filling in the middle. Repeat this step with the remaining tortillas.
