Trend: sweet potato ice cream (and this is how you make it yourself) | Culinary

George Lee, a popular chef on Instagram and Tiktok, recently shared a video on his social media channels of making sweet potato ice cream. It became a hit!

The chef uses the ice creams, which have the taste and structure of caramel ice cream, a potato variety with orange flesh that is mainly available in Taiwan. Or else Japanese or Korean sweet potatoes, with a yellow interior (and purple skin).

He makes the treat by first baking the sweet potatoes until soft and then caramelizing. Then they go into the freezer. The cold, custard-like pulp makes these ice creams such a tasty snack, according to Lee.

In any case, it is important that the potatoes have a high content of natural sugars. So don’t use too starchy sweet potatoes, Lee points out.

In the Netherlands you could go for the orange sweet potatoes, preferably small to medium size (300 to 400 grams, not too large). Wash and scrub them thoroughly and bake them in the oven at 230 degrees for 40 to 60 minutes.

When they have cooled down, you can pack them in freezer bags and freeze. After four hours, they should have the perfect texture.
